TECHNOLOGICAL IMPACTS ON FOOD SCIENCE ARE THE THEME OF A SYMPOSIUM ORGANIZED BY UNICAMP
With 30 years of existence, SLACAN celebrates its trajectory in a convention center in Circuito das Águas, in the interior of São Paulo!
The 16th Latin American Symposium on Food Science and Nutrition - SLACAN, of the School of Food Engineering - FEA/UNICAMP, will discuss, from November 17 to 19, 2025, in Águas de Lindóia (SP), "Food Science and your Importance in Health, Technological and Social Development".
In its 30 years of history, SLACAN has brought together 25,000 participants, always focused on anticipating trends, presenting new research and its applicability in food production. SLACAN, with its undeniable impact on the development of the Food and Nutrition area in Brazil and Latin America throughout its existence, integrates new research groups and partnerships with each edition.
With its consolidated brand in the academic, scientific and business world, with the participation of the Brazilian industry, SLACAN is a relevant opportunity in the Food area on the international scene, with the presence of international speakers from Canada, Sweden, Italy, the United States and South America.
SLACAN has the support of sbCTA, Unicamp, CNPq, CAPES, FAPESP in its editions.
Chaired by Professor. Dr. Glaucia Pastore, since 1995, the event has presented the most recent studies on nutrition, combined with prevention and health improvement, with the presentation of research from postgraduate and undergraduate courses in the area of Food (Food Science, Technology and Engineering, Nutrition, Medicine and Health) at an international level.
“The food industry plays an increasingly important role, and we have a highly challenging scenario to work with. In three decades, we can see the creation of dozens of national and multinational companies and their Research and Development departments, many structured by researchers who passed through SLACAN and who also expanded the agreements for studies of new products with several universities and national research centers”, adds Glaucia.

What are PANC?
PANC stands for Unconventional Food Plants, a term coined by biologist Valdely Knupp in his book Plantas Alimentícias Não Convencionais (PANC) no Brasil, written in partnership with Henry Lorenzzi and Neide Rigo. These plants are a treasure of Brazilian biodiversity and can be used in food in a sustainable and nutritious way.
